Overview
Tombo (albacore) have a pinkish to red meat color and typically range in size from 30-65 lb whole weight. Great for sashimi, grilled as steaks, or in a salad. Tombo are versatile, healthy and very delicious. Pinkish flesh cooks to white, often served with a fruit salsa or citrus-soy marinade.
